How reliable are the estimated days?
Every estimated day gets checked against CEF's real figure once they publish it, so this improves on its own over time.
Daily Basic Fuel Price vs. price built into the current pump price
The blue line is each day's real import cost. The flat orange line is the cost that's already priced into what you're paying right now — it was fixed when the current month's price was set, and only changes on the next price change. The gap between them is the daily over/under-recovery below.

Daily unit over/(under) recovery
Below the zero line = under-recovery (fuel cost more that day than what's priced in — pushes the next price up). Above zero = over-recovery (pushes it down).
USD/ZAR exchange rate
The rand's strength against the dollar is one of the two big drivers of the fuel price — a weaker rand (higher number) pushes fuel prices up, a stronger rand pulls them down.
